Recipe: Chicken Laksa

Ingredients:


> 1-2 Chicken Fillets, diced


> 1 Teaspoon Peanut Butter


> Fresh Coriander


> 1 Teaspoon Ground Turmeric (Curcumin)


> 3 Lime Leaves


> 1 Tablespoon Sesame Oil


> 1 Tablespoon Fish Sauce


> Broccoli (Asparagus or Any Greens)


> 1 Tablespoon Soy Sauce


> 4 Spring Onions, Chopped


> 2 Green Chilis, chopped


> 2 Garlic Cloves, chopped


> 1 Thumb Fresh Ginger, diced


> 1 Tin Coconut Milk, 2 Tablespoons Only

 

Steps:

 

Cook off the chicken in a pan with drizzle of olive oil.


In a blender, put the other ingredients except for the coconut milk. Keep some of the coriander to the side.


Once blended, add it to the pan. Mix for 3-5 minutes. Add the coconut milk. Bring to the boil and simmer for a few minutes. Add the leftover coriander at the end.

 

Eat and enjoy.
