Recipe: Butter Chicken


> 2-3 Chicken Fillet, Chopped

> 3 Garlic Cloves, Crushed

> 1-2 Tablespoons Greek Yoghurt

> 1 Tsp Chili Powder

> 1 Tsp Ground Cumin

> 1 Tsp Garam Masala

> 1 Tsp Ground Coriander

> 1 Tsp Paprika (Mix in a Dish, Leave to Sit for a few hours in the fridge)

> 1-2 Tablespoons of Coconut Milk

In a Pot, heat:

> 1 Cinnamon Stick

> 1-2 Teaspoons of Grass Fed Butter (good old Kerrygold is the best you can get)

> 4 Medium Tomatoes, chopped

> 1 Tablespoon Tomato Puree

> 3-4 Cardamom Pods, crushed

> 1 Tablespoon White Wine Vinegar

Bring tomato/vinegar/butter/cinnamon/cardamom mix to the boil and stir vigorously, until tomatoes are soft and the mix is reduced. Then add the chicken and spices. Colour the chicken. Add the coconut milk. Simmer and reduce.
